I’m not sure if you know this, but smoking a turkey is the most difficult thing. Most people don’t even bother because they can’t figure out how to do it.

I have been cooking turkeys for Thanksgiving for 10 years now, and I have never used an electric smoker. This year I decided to take the plunge and try something new.

Also, keep in mind that you should check your turkey every hour or so to avoid overcooking it.

  • Turn on the smoker
  • Place turkey in smoker and close lid
  • Smoke for five hours if a 12-pound turkey or six hours if it weighs 14 pounds.
  • Check every hour by inserting a fork into the thickest part of the meat to see that it is white all the way through, not pink. If still pink cook longer.

If the turkey is done, take it out and place it on the platter. Let cool for 30 minutes before carving.
