  • Turn on the smoker
  • Place turkey in smoker and close lid
  • Smoke for five hours if a 12-pound turkey or six hours if it weighs 14 pounds.
  • Check every hour by inserting a fork into the thickest part of the meat to see that it is white all the way through, not pink. If still pink cook longer.

If the turkey is done, take it out and place it on the platter. Let cool for 30 minutes before carving.
